Korean Spicy Cucumber Kimchi Salad, also known as Oi Muchim, takes only about 2 min to make and it’s a perfect side dish for hot & humid summer days. It helps digestion, very refreshing and if you add your choice of protein you’ll get yourself a nice, brown bag friendly lunch.
You’ll need:
1 English cucumber, cut into thin slices
1 teaspoon of white vinegar
1 teaspoon of sesame oil
1 tablespoon of soy sauce
1 teaspoon of sugar
1/2 of a teaspoon of salt
1 teaspoon of toasted sesame seeds
1 teaspoon of Korean hot pepper flakes
