Rise: 45
Bake: 25-30 min
You will need:
1⅓ bread flour or all-purpose flour
1 pkg. active dry yeast
1 tsp sugar
1 tsp salt
1¼ cups warm water (120°F-130° F)
2 tsp olive oil
1 1/3 cup flour, semolina flour, or bread flour
2 cups Sauce of your choice
1 ½ -2 cups shredded cheese
Directions:
In a medium bowl, combine the 1⅓ flour, yeast, sugar, and salt. Add warm water and olive oil. Beat on low speed for 30 seconds, scraping the sides constantly. Then, Beat on a high speed for 3 min, stirring in semolina flour. Turn out dough on a lightly floured surface. Knead in additional flour, if needed, to make a slightly stiff dough that is smooth and elastic (6-8 min total). Form the dough into a ball. Place the dough in a lightly greased bowl and turn it over once to oil the surface. Cover; (it’s better to use a cloth) and let it rise in a warm area until it doubles in size. It will usually take about 45-60 minutes.
When that slow hour elapses, roll the dough and cut it into 2 pieces. If you want a large pizza, cut off 3/4 of the dough and save the rest for later. (Unless you have a large enough oven). Roll into a circle on a floured surface. You probably know how to do it from here. Add the sauce and toppings. For stuffed crust put stuffing on the edge and roll in.
